  • 2 ripe bananas spotty and soft
  • 1 cup rolled oats
  • 1/4 cup almond butter or peanut butter
  • 2 eggs
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • salt pinch

  • mini chocolate chips optional
  • chopped walnuts optional
  • flaxseed optional

  • 8x8-inch baking pan
  • Mixing bowl
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  2. Mash bananas in a large mixing bowl until smooth.
  3. Add eggs, nut butter, vanilla, and cinnamon. Stir well to combine.
  4. Mix in oats and salt. Fold in any optional add-ins like chocolate chips or flaxseed.
  5. Pour the batter into the lined pan and spread evenly.
  6. Bake for 20–25 minutes or until the edges are golden and the center is set.
  7. Let cool before slicing into bars. Serve warm or store for later.

Notes

Use very ripe bananas for best flavor. Want them firmer? Bake 5 minutes longer. Store in fridge up to 5 days or freeze for 2–3 months.
