- Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
- Mash bananas in a large mixing bowl until smooth.
- Add eggs, nut butter, vanilla, and cinnamon. Stir well to combine.
- Mix in oats and salt. Fold in any optional add-ins like chocolate chips or flaxseed.
- Pour the batter into the lined pan and spread evenly.
- Bake for 20–25 minutes or until the edges are golden and the center is set.
- Let cool before slicing into bars. Serve warm or store for later.
Notes
Use very ripe bananas for best flavor. Want them firmer? Bake 5 minutes longer. Store in fridge up to 5 days or freeze for 2–3 months.
