Method
- Pat chicken thighs dry and season generously with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Heat oil in a skillet over medium-high heat. Sear chicken thighs on both sides until golden brown and cooked through.
- In a bowl, whisk mayonnaise, sweet chili sauce, sriracha, honey, garlic, and lime juice until smooth.
- Reduce skillet heat to low. Add Bang Bang sauce and toss chicken until fully coated and glossy. Simmer 1–2 minutes.
- Garnish with scallions, sesame seeds, and lime wedges. Serve over rice or noodles.
Notes
Swap mayo for Greek yogurt for a lighter version. Bake at 375°F (190°C) for 25 minutes if preferred. Add soy sauce for extra umami depth.
