- Pat the chicken thighs dry with paper towels to remove moisture and ensure crispy skin.
- In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
- Rub the seasoning mix generously all over the chicken thighs, including under the skin for more flavor.
- Place the seasoned chicken thighs skin-side up on a lined baking sheet, leaving space between each piece.
- Bake in a preheated oven at 425°F (220°C) for 35–45 minutes, until the skin is golden and the internal temperature reaches 165°F (74°C).
- Optional: Broil for 2–3 extra minutes for crispier skin. Let rest for 5 minutes before serving.
Notes
You can substitute with boneless thighs for quicker cooking or swap in your favorite spice blends. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
