Ingredients
  

Chicken Thighs
  • 8 bone-in, skin-on chicken thighs
Seasoning Mix
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika sweet or smoked
  • 1 tsp dried thyme or oregano
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper

Method
 

  1. Pat the chicken thighs dry with paper towels to remove moisture and ensure crispy skin.
  2. In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
  3. Rub the seasoning mix generously all over the chicken thighs, including under the skin for more flavor.
  4. Place the seasoned chicken thighs skin-side up on a lined baking sheet, leaving space between each piece.
  5. Bake in a preheated oven at 425°F (220°C) for 35–45 minutes, until the skin is golden and the internal temperature reaches 165°F (74°C).
  6. Optional: Broil for 2–3 extra minutes for crispier skin. Let rest for 5 minutes before serving.

Notes

You can substitute with boneless thighs for quicker cooking or swap in your favorite spice blends. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
