Ingredients
  

Chicken
  • 1.5 lbs chicken breasts or thighs boneless and skinless
Aromatics & Vegetables
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
Seasoning
  • 1 tbsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes
Broth & Cream
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup Parmesan cheese freshly grated
Tuscan Add-Ins
  • 1/2 cup sun-dried tomatoes drained & chopped
  • 2 cups fresh spinach
Pasta (Optional)
  • 1.5 cups ditalini, orecchiette, shells, or egg noodles cook separately for best texture
Finishing
  • 1 tbsp lemon juice optional for brightness
  • fresh basil or parsley for garnish

Method
 

  1. Sauté onions, garlic, carrots, and celery in butter or oil until softened and fragrant.
  2. Add Italian seasoning and red pepper flakes. Stir for 30 seconds to bloom the spices.
  3. Pour in chicken broth and add chicken breasts or thighs. Simmer for 20 minutes until tender.
  4. Remove chicken, shred it, and return it to the pot.
  5. Stir in heavy cream, Parmesan, and chopped sun-dried tomatoes. Simmer 5 minutes.
  6. Add spinach and stir until wilted.
  7. Add cooked pasta right before serving for best texture.
  8. Taste and adjust salt, pepper, and lemon juice. Serve with extra Parmesan and basil.

Notes

For extra creaminess, blend 1/2 cup of the soup and stir it back in. Store pasta separately to avoid mushiness.
