Method
- Sauté onions, garlic, carrots, and celery in butter or oil until softened and fragrant.
- Add Italian seasoning and red pepper flakes. Stir for 30 seconds to bloom the spices.
- Pour in chicken broth and add chicken breasts or thighs. Simmer for 20 minutes until tender.
- Remove chicken, shred it, and return it to the pot.
- Stir in heavy cream, Parmesan, and chopped sun-dried tomatoes. Simmer 5 minutes.
- Add spinach and stir until wilted.
- Add cooked pasta right before serving for best texture.
- Taste and adjust salt, pepper, and lemon juice. Serve with extra Parmesan and basil.
Notes
For extra creaminess, blend 1/2 cup of the soup and stir it back in. Store pasta separately to avoid mushiness.
