- Preheat oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
- Rub chicken with olive oil and season with salt, pepper, garlic powder, smoked paprika, and Italian seasoning.
- Optional: Lightly sear chicken in a hot skillet for 1–2 minutes per side for added flavor and color.
- Mix Parmesan, mozzarella, and breadcrumbs (if using). Press the cheese mixture onto each chicken breast.
- Bake for 20–25 minutes or until chicken is cooked through (165°F) and cheese is golden and bubbly.
- Top with chopped parsley and serve hot with your favorite sides.
Notes
For a crispy finish, broil during the last 2 minutes of baking. Serve with mashed potatoes, veggies, or salad for a restaurant-style meal.
