Method
- Preheat oven to 400°F (200°C).
- In a bowl, toss zucchini, bell pepper, onion, and garlic with 1 tbsp olive oil, oregano, basil, salt, and pepper. Spread evenly in a 9×13 baking dish.
- Season chicken breasts with salt and pepper. In a skillet over medium heat, sear each side for about 2 minutes until lightly browned. Place over veggie mixture in baking dish.
- Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
- If using cheese, add mozzarella in the final 5 minutes of baking. Return to oven until melted.
- Remove from oven, let rest 2–3 minutes. Garnish with fresh parsley and serve warm.
Notes
Feel free to swap in chicken thighs or add mushrooms or tomatoes for variety. Meal preps well and makes great leftovers. Skip cheese for NSNG style.
