Ingredients
  

Chicken Filling
  • 1 lb lean ground chicken
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce or coconut aminos for Whole30/Keto
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce optional; skip for Whole30
  • 1/2 cup water chestnuts chopped
  • 2 green onions sliced
  • to taste red pepper flakes optional for spice
Wraps & Garnish
  • 1 head butter lettuce leaves separated and washed
  • as needed lime wedges for serving
  • as desired sesame seeds or chopped herbs optional for garnish

Method
 

  1. Heat sesame oil in a skillet over medium heat. Add garlic and ginger, sauté until fragrant (30 seconds).
  2. Add ground chicken and cook, breaking it apart, until browned and cooked through.
  3. Stir in soy sauce, rice vinegar, and hoisin sauce (if using).
  4. Add chopped water chestnuts and green onions. Warm through, then adjust seasoning with red pepper flakes or lime juice.
  5. To serve, scoop 2–3 tablespoons of filling into each lettuce leaf. Garnish with sesame seeds or herbs and serve with lime wedges.

Notes

To meal prep, store the filling and lettuce separately. Reheat filling and assemble wraps just before eating for best texture.
