Ingredients

Chicken Wings
  • 2 lb chicken wings fresh or thawed
  • 1 tbsp aluminum-free baking powder
  • 1 tsp salt
Seasoning Options (Choose One)
  • 1 tbsp garlic powder for classic flavor
  • 1 tbsp paprika for smoky flavor
  • 1 tbsp Italian herbs optional
  • 1 tbsp olive oil spray or avocado oil spray light coating

Equipment

  • Wire Rack
  • Baking Sheet
  • Paper Towels
  • Oven

Method

  1. Preheat oven to 400°F (200°C). Place a wire rack on a foil-lined baking sheet.
  2. Pat the wings dry with paper towels to remove as much moisture as possible.
  3. Toss wings with baking powder and salt in a large bowl. Add desired seasoning.
  4. Arrange wings on the rack in a single layer with space between each.
  5. Bake for 40-45 minutes, flipping halfway through for even crisping.
  6. Optional: Broil for 2-3 minutes at the end to enhance crispiness. Serve immediately.

Notes

To prep ahead, season wings and refrigerate uncovered up to 24 hours. For even crispier skin, rest the seasoned wings uncovered for 1-3 hours before baking.
