- Cook the tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add sliced sausage and cook until lightly browned.
- Add broccoli florets and a splash of water. Cover and steam for 3–4 minutes.
- Remove lid, stir in minced garlic, and cook for 1 more minute.
- Add the cooked tortellini to the skillet and toss everything together.
- Sprinkle with Parmesan, black pepper, and salt. Add red pepper flakes or lemon zest if desired. Serve warm.
Notes
Swap broccoli with spinach or zucchini for variation. Use dairy-free cheese and sausage for a dairy-free version. Reheats well—add a splash of water or broth to loosen.
