  • 10 oz cheese tortellini fresh or frozen
  • 1 tbsp olive oil
  • 2-3 pre-cooked sausages sliced; chicken or turkey recommended
  • 2 cups broccoli florets fresh or frozen
  • 2 cloves garlic minced
  • 1/4 cup Parmesan cheese grated
  • 1/2 tsp black pepper
  • salt to taste
  • red pepper flakes optional
  • lemon zest optional

Method
 

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add sliced sausage and cook until lightly browned.
  3. Add broccoli florets and a splash of water. Cover and steam for 3–4 minutes.
  4. Remove lid, stir in minced garlic, and cook for 1 more minute.
  5. Add the cooked tortellini to the skillet and toss everything together.
  6. Sprinkle with Parmesan, black pepper, and salt. Add red pepper flakes or lemon zest if desired. Serve warm.

Notes

Swap broccoli with spinach or zucchini for variation. Use dairy-free cheese and sausage for a dairy-free version. Reheats well—add a splash of water or broth to loosen.
