- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease with olive oil.
- In a bowl, coat chicken with olive oil, minced garlic, smoked paprika, salt, pepper, and grated Parmesan. Set aside.
- In a separate bowl, toss halved baby potatoes with olive oil, garlic, Parmesan, Italian seasoning, salt, and pepper.
- Arrange chicken and potatoes on the sheet pan in a single layer. Keep space between for crisping.
- Bake for 35–40 minutes, flipping potatoes halfway through. Chicken should be golden and fully cooked.
- Remove from oven and top with extra Parmesan and chopped parsley before serving.
Notes
For extra crispiness, broil for the last 2–3 minutes. Want heat? Add a pinch of chili flakes to the seasoning mix.
