  • 4 chicken breasts or thighs boneless and skinless
  • 1.5 lbs baby potatoes halved
  • 4 cloves fresh garlic minced
  • 0.5 cup grated Parmesan cheese
  • 3 tbsp olive oil divided
  • 2 tbsp butter melted
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease with olive oil.
  2. In a bowl, coat chicken with olive oil, minced garlic, smoked paprika, salt, pepper, and grated Parmesan. Set aside.
  3. In a separate bowl, toss halved baby potatoes with olive oil, garlic, Parmesan, Italian seasoning, salt, and pepper.
  4. Arrange chicken and potatoes on the sheet pan in a single layer. Keep space between for crisping.
  5. Bake for 35–40 minutes, flipping potatoes halfway through. Chicken should be golden and fully cooked.
  6. Remove from oven and top with extra Parmesan and chopped parsley before serving.

Notes

For extra crispiness, broil for the last 2–3 minutes. Want heat? Add a pinch of chili flakes to the seasoning mix.
