  • 4 boneless skinless chicken thighs or breasts
  • 3 cups baby potatoes halved
  • 4 cloves garlic minced
  • 1/3 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt to taste
  • black pepper to taste
  • paprika or chili flakes optional, for heat
  • fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss halved potatoes with olive oil, half the garlic, half the Parmesan, Italian seasoning, salt, and pepper.
  3. In another bowl, coat chicken with remaining oil, garlic, Parmesan, and spices.
  4. Spread potatoes on a lined baking sheet. Nestle chicken pieces between them.
  5. Bake for 35–40 minutes until chicken is golden and cooked through, and potatoes are tender.
  6. Broil for 2–3 minutes if desired for extra crispiness.
  7. Garnish with fresh parsley and extra Parmesan before serving.

Notes

Swap in vegetables like carrots or Brussels sprouts. Use sweet potatoes instead of baby potatoes. Great for meal prep and works well with bone-in chicken too—just adjust cook time.
