Ingredients
  

For the Chicken
  • 1.5 lbs chicken breasts or thighs boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice fresh
For the Street Corn Mix
  • 1.5 cups corn fresh, frozen, or canned
  • 3 tbsp Greek yogurt or light mayo
  • 1 tbsp lime juice fresh
  • 1/2 tsp chili powder
  • 1/4 cup crumbled cotija or feta cheese
  • 2 tbsp chopped cilantro
For the Bowl
  • 2 cups cooked rice white, brown, or cilantro-lime
  • 1 avocado sliced
  • 2 tbsp chopped green onions
  • lime wedges for serving

Method
 

  1. Season chicken with olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice.
  2. Cook the chicken in a skillet over medium heat until golden and fully cooked. Slice or cube.
  3. In a bowl, mix corn, yogurt or mayo, lime juice, chili powder, crumbled cheese, and cilantro. Set aside.
  4. Cook rice according to package instructions or reheat leftovers.
  5. Assemble each bowl: start with rice, add chicken, top with street corn mix.
  6. Garnish with avocado slices, green onions, and lime wedges. Serve warm.

Notes

Customize with grilled chicken for more smoky flavor. Store components separately for meal prep. Try with cauliflower rice for low-carb version. Double the corn mix for extra topping!
