Method
- Season chicken with olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice.
- Cook the chicken in a skillet over medium heat until golden and fully cooked. Slice or cube.
- In a bowl, mix corn, yogurt or mayo, lime juice, chili powder, crumbled cheese, and cilantro. Set aside.
- Cook rice according to package instructions or reheat leftovers.
- Assemble each bowl: start with rice, add chicken, top with street corn mix.
- Garnish with avocado slices, green onions, and lime wedges. Serve warm.
Notes
Customize with grilled chicken for more smoky flavor. Store components separately for meal prep. Try with cauliflower rice for low-carb version. Double the corn mix for extra topping!
