- Wash and halve the baby potatoes. Trim green beans. Slice sausage into coins. Mince garlic and slice onion.
- Layer potatoes in the Crockpot. Add green beans, then top with sausage and sliced onions.
- Drizzle olive oil over the top. Sprinkle with garlic, paprika, thyme, black pepper, and salt. Pour broth around the edges.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are tender.
- Gently stir before serving. Serve hot with crusty bread or a salad if desired.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat with a splash of broth for best texture.
