  • 1.5–2 lbs smoked sausage sliced into coins
  • 1.5 lbs baby potatoes halved
  • 12 oz fresh green beans trimmed
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • salt to taste

Method
 

  1. Wash and halve the baby potatoes. Trim green beans. Slice sausage into coins. Mince garlic and slice onion.
  2. Layer potatoes in the Crockpot. Add green beans, then top with sausage and sliced onions.
  3. Drizzle olive oil over the top. Sprinkle with garlic, paprika, thyme, black pepper, and salt. Pour broth around the edges.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are tender.
  5. Gently stir before serving. Serve hot with crusty bread or a salad if desired.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat with a splash of broth for best texture.
