- Slice onions into 1/2" thick rings, separate layers, and pat them thoroughly dry.
- Prepare three shallow bowls: one with almond flour, Parmesan, and seasonings; one with beaten eggs; and one for the psyllium powder.
- Dip each ring in the flour mixture, then egg, then again in the flour mixture (double dredge).
- Lightly dust the coated rings with psyllium powder. Let them rest for 5–10 minutes.
- Heat avocado oil to 375°F. Fry rings in batches for 2–3 minutes per side until golden brown. Avoid overcrowding.
- Drain on a wire rack. Optionally, bake at 400°F for 15 minutes if not frying.
Notes
To remove onion harshness, soak in buttermilk or almond milk with vinegar for 30 minutes. For extra crunch, try adding crushed pork rinds or baking instead of frying. Best served hot!
