Method
- Mix mayo, ketchup, mustard, and pickle juice in a bowl to create burger sauce. Set aside.
- Divide ground beef into 4 loose balls (4 oz each). Avoid overpacking.
- Heat cast iron skillet on medium-high until hot. Place beef balls and smash flat using metal spatula. Season with salt, pepper, garlic powder, and paprika.
- Cook patties 2–3 minutes until browned. Flip, add cheese, and cover briefly to melt. Set aside when done.
- Place tortilla in skillet, add cheese, then cooked patty on half. Top with diced onions, pickles, and drizzle of burger sauce. Fold over.
- Cook folded quesadilla 2 minutes per side or until golden and crispy. Repeat with remaining ingredients. Serve hot.
Notes
Customize with plant-based meat or alternate cheeses. You can prep the patties ahead and freeze them. Reheat in skillet for best texture.
