  • 1 lb ground beef (80/20) divided into 4 portions
  • 4 large flour tortillas 10-inch size
  • 2 cups shredded cheddar cheese freshly grated
  • 1 yellow onion finely diced
  • 1/2 cup pickles thinly sliced
Burger Sauce
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp pickle juice
Seasonings
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • diced jalapeños optional, for heat

Method
 

  1. Mix mayo, ketchup, mustard, and pickle juice in a bowl to create burger sauce. Set aside.
  2. Divide ground beef into 4 loose balls (4 oz each). Avoid overpacking.
  3. Heat cast iron skillet on medium-high until hot. Place beef balls and smash flat using metal spatula. Season with salt, pepper, garlic powder, and paprika.
  4. Cook patties 2–3 minutes until browned. Flip, add cheese, and cover briefly to melt. Set aside when done.
  5. Place tortilla in skillet, add cheese, then cooked patty on half. Top with diced onions, pickles, and drizzle of burger sauce. Fold over.
  6. Cook folded quesadilla 2 minutes per side or until golden and crispy. Repeat with remaining ingredients. Serve hot.

Notes

Customize with plant-based meat or alternate cheeses. You can prep the patties ahead and freeze them. Reheat in skillet for best texture.
