  • 1 head cauliflower cut into florets
  • 3/4 cup sharp cheddar cheese shredded, preferably reduced-fat
  • 1/4 cup Greek yogurt plain, nonfat or low-fat
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • to taste salt and pepper

Method
 

  1. Steam the cauliflower florets until tender, about 10 minutes.
  2. In a saucepan, stir together shredded cheddar, Greek yogurt, garlic powder, and paprika over low heat until cheese melts and sauce is smooth.
  3. Add the steamed cauliflower to the cheese sauce and stir to coat evenly.
  4. Season with salt and pepper to taste, then serve warm.

Notes

Try adding steamed broccoli or spinach to boost volume and fiber. You can also use part-skim mozzarella or mix cheeses for extra depth.
