Base Ingredients
  • 1 ripe banana the riper, the better
  • 1/4 cup unsweetened cocoa powder Dutch-processed or raw cacao preferred
  • 1 egg or 1 flax egg for vegan
Optional Add-ins
  • pinch of sea salt
  • vanilla extract optional
  • dark chocolate chips or walnuts optional for texture

Method
 

  1. Preheat oven to 350°F (175°C). Line a loaf pan or small baking dish with parchment paper.
  2. Mash the banana in a bowl until smooth.
  3. Whisk in the egg until fully combined.
  4. Add the cocoa powder and mix until smooth. Batter will be thick.
  5. Pour into the prepared pan and spread evenly. Add optional toppings now.
  6. Bake for 18–22 minutes or until the center is just set and a toothpick comes out mostly clean.
  7. Cool completely before slicing for the best fudgy texture.

Notes

To make vegan, use a flax egg (1 tbsp ground flax + 3 tbsp water, set 10 min). Add-ins like chocolate chips, nuts, or a swirl of nut butter can elevate the flavor. Store in the fridge for up to 5 days or freeze for up to 3 months.
